Cheese of sheer fruity pleasure!

Smooth taste, subtle abundance of real fruity flavours with slightly nutty aromas from the mountain pastures, and a strong and fruity odour.

The smooth pate is ivory / pale yellow in colour.

On its edge, its logo and name "Beaufort" and the number of the production plant are affixed to the blue casein.

How is it produced? :
Whole milk and raw milk is poured into a copper kettle where it is then curdled and "stirred on the fire." When its done, the cheese is molded in a linen cloth and shaped into a circle. The ripening period varies from 5, to more than 12 months. The cheeses are salted, rubbed and turned over twice a week.

The "Beaufort Summer" is made from milk produced in the mountain pastures, which is brought back down into the valleys, to be transformed in different production plans in the AOC area. It can be enjoyed during the winter, after 5 months to 1 year of ripening.

Tasting Advice :
Remove the cheese from the refrigerator half an hour before serving.

Preserving Advice :
Keep cheese in its original packaging in a refrigerator at a temperature of 8 ° (lowest shelf in the refrigerator)
